The Astral Project is a collaboration between our brother label, Loophole Brewery which we started back in 2016. Making beers in one of our back warehouses on our biodynamic vineyard Derek and couple of his mates started experimenting with recipes. Fast forward a few years with Brew House built and more than 20 styles on offer. Ideas mashing around the bonfire one night at Mount Benson, the concept of sharing knowledge across the two fermentation platforms with Head Brewer Tom O’Reilly and the team was formed. Our love of Wine Making & Beer Brewing belonged together.

Concepts we have explore so far; Fermentation of grapes using beer making techniques. Basket pressing of skins. Using the natural vineyard yeast on the grape skins to ferment beer bases resulting in wonderful colour extraction from the fruit and natural fruit souring from the grapes. Stored in our French oak wine barrels for maturation adding further connection to the winery.
